Is the Quest Hero Cookies & Cream Protein Bar ultra-processed?
Short answer
Yes. The Quest Hero Cookies & Cream bar is ultra-processed (NOVA 4). It has a lot of protein and almost no sugar, but both come from factory-made ingredients: milk protein isolates, three sweeteners and palm kernel oil. Truvi scores it 20 out of 100.

What's in a Quest Hero bar
The label lists 16 ingredients. They fall into four groups, and each group explains one thing the bar is known for.
- Protein. milk protein isolate, whey protein isolate and sodium caseinate. These are proteins separated out of milk in a factory. They are why one bar has 18 g of protein.
- Sweetness without sugar. allulose, erythritol and sucralose. Allulose is a rare sugar the body barely uses for energy, erythritol is a sugar alcohol and sucralose is an artificial sweetener. Together they keep sugar at about 1 g per bar.
- Fiber and bulk. soluble corn fiber. It adds most of the 6 g of fiber and gives the bar its body.
- Fat, taste and texture. palm kernel oil, palm oil, butter, cocoa processed with alkali and unsweetened chocolate, held together with lecithin and carrageenan and finished with natural flavors.
Why it counts as ultra-processed
NOVA is the food-processing scale used in nutrition research. Group 4, ultra-processed, covers foods made mostly from ingredients you would not cook with at home: isolated proteins, modified sugars and sweeteners, flavors and emulsifiers.
This bar has several of each, so it sits clearly in group 4. Being low in sugar does not change that. NOVA looks at how a food is made, not at its nutrients.
Is the Quest Hero bar healthy?
It depends on what you want from it. Here is one 52 g bar, from the manufacturer's label:
| Calories | 150 |
|---|---|
| Protein | 18 g |
| Fiber | 6 g |
| Sugar | 1 g |
| Saturated fat | 5 g |
| Salt | 0.5 g |
The good part: 18 g of protein and 6 g of fiber for 150 calories, with about 1 g of sugar. As a quick protein snack that is a strong ratio.
The weaker part: 5 g of saturated fat, a quarter of the 20 g daily value used on US labels, mostly from palm kernel oil. The saturated fat and the salt are why the bar comes out at Nutri-Score D on our calculation. Nutri-Score is the A to E nutrition grade used on packs in Europe.
Then there is the processing. Large reviews of the research link diets high in ultra-processed food with higher risks of heart disease, type 2 diabetes and early death (Lane et al., BMJ, 2024). That is about the overall diet, not about one bar now and then.
The additives worth knowing about
Carrageenan (E407)
A thickener made from red seaweed. In the French NutriNet-Santé study of about 104,000 adults, people who ate more carrageenan had a slightly higher risk of type 2 diabetes (Salame et al., The Lancet Diabetes & Endocrinology, 2024). The study shows a link, not proof that carrageenan is the cause.
Erythritol (E968)
A sugar alcohol used as a sweetener. A 2023 study found that people with higher blood levels of erythritol had more heart attacks and strokes over the following three years (Witkowski et al., Nature Medicine, 2023). The people studied already had heart risk factors, and again this is a link, not proof.
Sucralose (E955)
An artificial sweetener about 600 times sweeter than sugar. It adds sweetness without calories.
Lecithin (E322)
An emulsifier from sunflower or soy that keeps fat and water mixed. The European Food Safety Authority found no safety concern at current use levels in its 2017 review.
Better protein bars to try instead
These two protein bars score higher on the same scale. Both are still processed bars, but each has a shorter list of industrial ingredients or much less saturated fat.
-
IQ BAR Chocolate Sea Salt
Almonds are the first ingredient and the label lists no additives. Per 45 g bar: 12 g protein, 8 g fiber, 1 g sugar and 3 g saturated fat.

-
No Cow Lemon Meringue Pie Bar
Plant protein from brown rice and peas. Per 60 g bar: 22 g protein, 16 g fiber, 1 g sugar and 1 g saturated fat. It also uses erythritol.

Questions people ask
How much sugar is in a Quest Hero bar?
About 1 g per 52 g bar. The sweetness comes from allulose, erythritol and sucralose instead of sugar.
How much protein does a Quest Hero bar have?
18 g per bar, mostly from milk protein isolate and whey protein isolate.
Why is a low-sugar bar ultra-processed?
Sugar and processing are measured separately. NOVA rates how a food is made, and this bar is built from isolated proteins, sweeteners, emulsifiers and flavors, which puts it in group 4 whatever its sugar content.
How is the Truvi score calculated?
It combines three measures: how processed the food is (NOVA and additives), its nutritional quality (Nutri-Score) and how filling it is. Each is scored 0 to 100 and blended into one number.
